Kid Breakfast Revamp

I am currently working through a Morning series with my blog posts, and this week I want to talk about breakfasts. Ugh. Do we have to? 

I have two kids and they are both in the higher grades of elementary school. They have started to be able to get themselves breakfast in the morning, and although that is amazing, I’m still struggling with what to feed them. After all these years of school (minus those fuzzy pandemic years where we were all at home…all…day…every…day), you’d think I’d have my breakfast game together. Alas, you would be thinking wrong. 
 
Lately, I have been very lazy with morning breakfasts for my kids. During the weekdays, once in a while they will choose to have school breakfasts (usually on cinnamon roll day or waffle day), but the other days we do home breakfast. And they are a struggle.  During the weekdays, we mostly give them cereal, Greek yogurt, fruit, and frozen waffles or pancakes. In rotation. Over and over. For cereal, I only let them have Rice Krispies or Honey Nut Cheerios, somehow believing that saving any more “sugary” cereals for the weekend is really a mom win. Again, ugh.  
 
What are my goals for my kids breakfasts? First, I would like them to get more protein. The Greek yogurts are a great source of protein, but they also have more sugar than I’d like.  Which is another one of my goals, to lower the amount of sugar they get in the morning for breakfast (but still having it taste good).  I really need breakfast time to remain quick and easy, since my husband and I are getting ready for work at the same time and we really don’t have much time to do anything elaborate. Finally, I do want my kids to like the breakfasts. I have tried whole grain waffles and oatmeal, but they just didn’t like the taste. I don’t blame them, but I know there are more healthy options out there that we can both agree on (plus they always eat my mom’s oatmeal when she makes it, so I guess I just need grandma’s recipe!) 
 
For the month of May, I have decided my goal will be to try a few different new breakfast options to see what they think. For each of these options, I will try to list a recipe (if applicable), the time it took me to prepare the breakfast, any extra prep I had to do the night before, and of course, the rating by the kids. 
 
Here is a list of the breakfasts I plan to try during the month of May:
1. First, I will try making them scrambled eggs once per week. I wanted them to get more protein in their breakfasts, and eggs are a great source of protein. Also, they love them. I keep thinking it will take me too long in the morning while I’m trying to herd the cats and get us all ready for the day, but I’m probably just being lazy. Plus, maybe this is something I can teach my older son to make and then it will be easier for me (which is very important, let’s be honest).
 2. Oatmeal with toppings. When my kids stay at my mom’s house, she makes them oatmeal in the mornings and they shovel it in. I tried a few times and could never get the same reaction. This time, I plan to reach out to her and get the details so I can make something they will eat. 
3. I know my kids love muffins so I have decided to give a few different recipes a try. I’ve tried the chocolate muffin mix from Kodiak Cakes, but they were not a hit. I know they love the muffins at school, but the sugar content kills me.  I really appreciate how easy muffins can be since I can make them in the evening and then just quickly warm them in the morning. I want to try a few muffins with a lower sugar count and maybe try substituting other ingredients to help them be a little healthier. 
 
4. I would love to try some type of “cup” where I use eggs and diced up ham/veggies/etc in muffin tins and make egg cups for the kids to eat. My kids claim they won’t eat them, but they are worth a try. 
5. Finally, my kids love tacos and quesadillas and burritos, so I’m thinking some type of breakfast version of these might go over well. I’d prefer a recipe that could be made ahead and then warmed up the morning before school. 
 
Sadly, I have been trying to write this post for a few months now.  Instead of writing a post about what I plan to do, I was going to try the breakfasts and then write one post. However, I really need a kick in the ass to get this going, so I’m going to use this post as my accountability post to get my started. At the end of May, I hope to check back in and review the recipes I tried and report on how my kids like the new breakfast options.
