Mom’s Famous Banana Bread
This week has drained me and the only post I can gather the energy to make is one with my mom’s yummy banana bread recipe.
- 2 cups flour
- 2 tsp baking powder
- 1/2 cup shortening
- 1 cup mashed bananas
- 1 cup sugar
- 2 eggs
- 1 tsp lemon juice
- Chocolate chips (optional, but why wouldn’t you?)
- Preheat oven to 350 degrees.
- Combine flour, sugar and baking powder.
- Scoop chunks of shortening into the mix.
- Use a pastry blender (I had to look this up because I called it a “cutter”) on the mix until you have pea size flour pieces.
- Make a hole/well in the center of the bowl.
- Crack eggs into the center of the bowl and beat (like scrambled eggs – yes I have this note on my recipe).
- Mix bananas and lemon in a blender.
- Add banana/lemon mixture into eggs and mix.
- Slowly stir the flour on the sides into the middle of the bowl all the way around.
- Coat a bread pan with shortening and sprinkle flour inside.
- Add mixture to pan.
- (Optional) Sprinkle top with chocolate chips
- Bake at 350 degrees for 55 minutes.
- Test with a knife or toothpick to make sure it comes out clean.
