Mom’s Famous Banana Bread

This week has drained me and the only post I can gather the energy to make is one with my mom’s yummy banana bread recipe.


This is comfort food at its finest. No “healthy substitutions”, no clean ingredients. Just pure, sugary, yummy comfort. And since I hate posts that drag on and on before you get to the recipe, here it is:

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 cup shortening
  • 1 cup mashed bananas
  • 1 cup sugar
  • 2 eggs
  • 1 tsp lemon juice
  • Chocolate chips (optional, but why wouldn’t you?)

  1. Preheat oven to 350 degrees.
  2. Combine flour, sugar and baking powder.
  3. Scoop chunks of shortening into the mix.
  4. Use a pastry blender (I had to look this up because I called it a “cutter”) on the mix until you have pea size flour pieces.
  5. Make a hole/well in the center of the bowl.
  6. Crack eggs into the center of the bowl and beat (like scrambled eggs – yes I have this note on my recipe).
  7. Mix bananas and lemon in a blender.
  8. Add banana/lemon mixture into eggs and mix.
  9. Slowly stir the flour on the sides into the middle of the bowl all the way around.
  10. Coat a bread pan with shortening and sprinkle flour inside.
  11. Add mixture to pan.
  12. (Optional) Sprinkle top with chocolate chips
  13. Bake at 350 degrees for 55 minutes.
  14. Test with a knife or toothpick to make sure it comes out clean.
  15. Enjoy!
